Toffee Bars
I don’t remember where I first found this recipe, but I’ve been baking these since college. They’re quick to throw together, and are great for potlucks or unexpected company. I always bake with dark brown sugar which intensifies the toffee flavor.
In a stand mixer, blend on medium speed for about 3 minutes until fluffy:
2 sticks Butter (1 cup)
1 cup Dark Brown Sugar
1 teaspoon Vanilla
Add 2 cups Flour and continue mixing until thoroughly blended.
Then add:
1 cup Walnuts
1 bag Chocolate Chips
Press into a 9″ x 13″ pan and bake for 18 – 22 minutes depending on how brown you like them.
Cool, and cut into bars.

I think my father would like these. He’s been in the hospital for the last few days and he is pretty depressed. He is a dessert fanatic, and since he has no diet restrictions I was thinking of taking something sweet to him. This sounds really delicious and quick to make. Just what I need.
