Tomato Rice Soup
In a food processor, mince:3 ribs Celery
3 Carrots
1 Onion
This combination of vegetables, known as mirepoix, serves as the flavor foundation for any number of dishes.
In a deep skillet over medium heat, saute:
1/2 cup Olive Oil
2 cloves, Garlic, minced
Minced Vegetables
Stir until vegetables begin to soften, then add:
1 teaspoon Italian Herb Mix
1/2 teaspoon each Salt & Pepper
4 Tomatoes, cubed
Continue stirring until Tomatoes begin to lose their skins, then pour in
4 cups Chicken Broth
1 cup Rice (I like thick soup - if you like it brothy, reduce rice to 1/2 cup)
Reduce heat to medium-low, and cook for 25 minutes, stirring occasionally, until rice is cooked. Top with shredded Italian Blend Cheese.

Savory Cheese and Chive Bread
This week's French Fridays with Dorie challenge is this fluffy egg bread studded with herbs and cheese. Dorie says it looks like an American quick bread, and it does, but the texture is so much lighter.
I used Cheddar Cheese, Chives, Sage, and Tarragon in mine. Dorie says it's great to nibble with wine - I agree - and think I'll make it for our next wine-tasting party. It really couldn't be any easier!
