In a food processor, mince:
3 ribs Celery
3 Carrots
1 Onion
This combination of vegetables, known as mirepoix, serves as the flavor foundation for any number of dishes.
In a deep skillet over medium heat, saute:
1/2 cup Olive Oil
2 cloves, Garlic, minced
Minced Vegetables
Stir until vegetables begin to soften, then add:
1 teaspoon Italian Herb Mix
1/2 teaspoon each Salt & Pepper
4 Tomatoes, cubed
Continue stirring until Tomatoes begin to lose their skins, then pour in
4 cups Chicken Broth
1 cup Rice (I like thick soup – if you like it brothy, reduce rice to 1/2 cup)
Reduce heat to medium-low, and cook for 25 minutes, stirring occasionally, until rice is cooked. Top with shredded Italian Blend Cheese.

Hi Susan, a steaming hot bowl of this soup would be so good, can you believe it was -20C here yesterday? 🙂 And the savory cheese bread looks perfect! Your photos make me want to run to the kitchen and bake.
