This week's Baked Sunday Mornings challenge is for the rich, creamy, and crunchy PB&J Bars. My brother, who is known to smear peanut butter on *almost* everything, loved these. And, my step-father reserved a batch for his birthday (in August). I think you're getting the idea...these are good...really good!
The shortbread crust is topped with a light and fluffy peanut butter layer that's like fudge. Then, it's smeared with concord grape jelly and coated with an oat crumble topping. Next time, I would melt the jelly to spread it more evenly. I also have to say I would be very tempted to replace the jelly with melted semi-sweet chocolate!
These were a little time-consuming, but not at all difficult to make.

ReplyDeleteLove them. The Baked Boys never fail. I did these last spring to take to a Persian picnic. Guests were trying not to be impress with them because they weren't Persian but secretly were trying to sneak them into their purse to take home for later. Ha! They were embarrassed that I saw them but I was happy as that is the ultimate compliment, right? There really is no resisting these and now that I see them with an oat crumble I want to make them Baked style! Yum!

ReplyDeleteI'm re-thinking these bars and and stirred my strawberry jelly until it was like melted-spreadable...and I think that was a mistake. My jelly smooched down into the peanut butter layer too much and did not hold up my crumb topping very well which caused that topping to get too absorbed into the fats layer. I think, after looking at what others have done, that I will get a "dryer" more chunky jelly or preserves and can be substantial enough to hold up the top layer. Mine are good, but I think they could be prettier. And, yes, chocolate sounds really good. Your bars look really good and the Sweet Williams are so beautiful.

ReplyDeleteI was thinking I'd like to make these with a different nut butter (or Biscoff spread) since I don't like peanut butter. And then I saw your comment about chocolate... okay, Biscoff spread and chocolate would be amazingly good.
ReplyDeleteI've made a slice similar to this before. The filling contained condensed milk and peanut butter and the crumb topping had chunks of milk choc mixed through it, just as addictive as this slice though.
