This week's French Fridays with Dorie challenge was like an art project - carefully constructed, and beautifully presented. I really enjoyed the process and composition. Everything about this tart was inspired.
This rich tart starts with a baked cocoa sable pastry that is lined with caramelized bananas, filled with chocolate ganache, and topped with fresh banana slices brushed with apricot jam.
I like bananas, but they aren't my favorite fruit - I love strawberries, peaches, coconut, and oranges. I really liked the flavor of the caramelized bananas, but didn't really care for the fresh bananas with the richness of the chocolate.
This would be my ideal dessert with strawberries, or raspberries.

Your tart looks perfect, but I agree about the bananas...I was thinking about raspberries, etc. And I was not excited about the caramelized bananas...I was thinking about more of a caramel sauce with the bananas...oh well. I'll make up my own version next time. My tasters really enjoyed this tart, however, I think bananas are too ordinary for the decadence of this chocolate.

ReplyDeleteI'm with you on the chocolate and fruit combination. I also prefer other combos. This was good, but I was thinking that raspberries would have been even better.

ReplyDeleteThat foxglove is so pretty! I'm kind of a new gardener so I've been enjoying taking pics of all my blooms too - so far I think the columbine is my favorite. It's so strange and alien looking! Your tart looks so yummy and I agree, even though it was kind of a pain to place all those slippery banana slices it was very satisfying to see the end result look so appealing!
ReplyDeleteOh my your tart looks beautiful! You were able to capture that caramelized banana layer. I decided to go with the Nutella version and it was a hit. But I agree, other flavors would be lovely.
ReplyDeleteCould this be, Susan, too many bananas is probably not a good thing? A little Crème Fraîche with toasted sliced hazelnuts as a topping. Forget the banana/apricot jam/lemon juice combo. Or, another fruit altogether. Still, delicious, and yours looked yummy. The digitalis looked beautiful. Don't eat it!

ReplyDeleteOh Susan - yours photos are so lovely ! The foxglove too- they are a favorite of mine. Nana did well with the nutella version and I was pleased with the banana one I got in just under the deadline....but I am with you on the raspberries. That combo is a favorite of my husband so I think I will surprise him with this on Father's Day....since I can't wait much longer to try it !!
