1 Carrot, finely chopped

| Ready for the oven! |
1 1/2 pounds Lean Ground Beef
1/2 pound Pork Sausage (we used Jimmy Dean Pork Sage Sausage)
2 Eggs
1/2 cup Ketchup
1/4 cup Milk
1 cup Sourdough Breadcrumbs
1/2 teaspoon Black and Red Spice
1/2 teaspoon dried Thyme (use more if using fresh herbs)
1/4 cup Fresh Italian Parsley, minced
2 teaspoons Salt
1/2 teaspoon Cumin.
1/2 teaspoon freshly ground Nutmeg
1 Tablespoon Worcestershire Sauce
Sauteed vegetables.
Line a rimmed baking sheet with foil and center a roasting rack in the middle of it.
Separate meat mixture into 2 equal portions and shape into 2 loaves.
Set on a roasting rack, spread a thin layer of Ketchup on top of each loaf, and bake for 1 hour.
For nice slices, allow to rest for about 10 minutes before slicing - we clearly skipped this step.

ReplyDeleteI LOVE meatloaf! Thanks to John for sharing his yummy version :)
ReplyDeleteI have been thinking about this meal since I read your Post last week. I love meatloaf, I love loaf of any kind. Last night, while catching up on my Saveur magazine, I spotted a recipe for a Ham Loaf, the signature dish at the Hamline United Methodist Church's dining hall at the Minnesota State Fair. That ham loaf is going to be part of next week's menu along with fond memories of the Iowa State Fair. I'll raise a glass to you, John, when I sit down to eat it. Mashed potatoes, yes. Beans, probably not.
