Lester's Meatloaf, Mashed Potatoes, and Ranch Beans

John doesn't use recipes very often.  Occasionally, he peruses cookbooks just to get ideas - that's how this meatloaf was created.  It's packed with flavor, moist, and delicious.

Lester's Meatloaf
Preheat the oven to 375 degrees F.

In a small frying pan, saute:
2 Tablespoons Olive Oil
2 ribs Celery, finely chopped
1 Red Onion, finely diced
1 Shallot, finely diced
1 Carrot, finely chopped
Cook until vegetables soften - about 8 minutes
Set aside to cool slightly.

Ready for the oven!
In a large bowl, thoroughly blend:
1 1/2 pounds Lean Ground Beef
1/2 pound Pork Sausage (we used Jimmy Dean Pork Sage Sausage)
2 Eggs
1/2 cup Ketchup
1/4 cup Milk
1 cup Sourdough Breadcrumbs
1/2 teaspoon Black and Red Spice
1/2 teaspoon dried Thyme (use more if using fresh herbs)
1/4 cup Fresh Italian Parsley, minced
2 teaspoons Salt
1/2 teaspoon Cumin.
1/2 teaspoon freshly ground Nutmeg
1 Tablespoon Worcestershire Sauce
Sauteed vegetables.

Line a rimmed baking sheet with foil and center a roasting rack in the middle of it.
Separate meat mixture into 2 equal portions and shape into 2 loaves.
Set on a roasting rack, spread a thin layer of Ketchup on top of each loaf, and bake for 1 hour.
For nice slices, allow to rest for about 10 minutes before slicing - we clearly skipped this step.

Mashed Potatoes

Peel and cube 6 - 8 medium Russet Potatoes.
Place them in a large saucepan and cover with water.
Add 1 teaspoon of Salt to the water and boil for 15 - 20 minutes over medium-high heat until the Potatoes can be easily pierced with a fork.
Turn off heat.
Strain Potatoes and return to pan.
Add 1/4 cup Butter.
1/2 cup Sour Cream.
Salt and Pepper, to taste.
Mash with a Potato Masher until they reach the desired consistency.

Ranch Beans
In a large saucepan, brown:
1/2 pound Pork Sausage (we used Jimmy Dean Pork Sage Sausage)
1 medium Onion, finely diced

When Sausage is browned, stir in 2 15-ounce cans Ranch Style Beans.
Simmer over low heat for about 20 minutes.

Enjoy!

  6. I have been thinking about this meal since I read your Post last week. I love meatloaf, I love loaf of any kind. Last night, while catching up on my Saveur magazine, I spotted a recipe for a Ham Loaf, the signature dish at the Hamline United Methodist Church's dining hall at the Minnesota State Fair. That ham loaf is going to be part of next week's menu along with fond memories of the Iowa State Fair. I'll raise a glass to you, John, when I sit down to eat it. Mashed potatoes, yes. Beans, probably not.
