Sour Cream Belgian Waffles with Berries Macerated in Licor 43


Sour Cream Belgian Waffles
Pre-heat Belgian Waffle maker to medium-high heat.

In a medium bowl, whisk:
2 eggs
1/2 cup milk
5 Tablespoons butter, melted
1/2 cup sour cream

When thoroughly combined, whisk in:
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 1/2 Tablespoons sugar

Spray Belgian Waffle maker with cooking spray.
Fill each quadrant with 1/3 cup batter.
Bake until golden brown - about 6 minutes.

Makes 2 waffles (8 4-inch squares).



If you've never tried Spain's acclaimed Licor 43, you're in for a treat!  Licor 43 earned its name from the infusion of 43 flavors - the most predominant are vanilla and citrus.  These macerated berries would make a wonderful topping to so many things:  Creme Brulee; Ice Cream; Pound Cake, etc.  

Berries Macerated in Licor 43
In a medium bowl, mix together
1 cup Raspberries
1 cup Blackberries
1 Tablespoon Orange zest
Juice of 1/2 Orange
1/4 cup sugar
1/4 cup Licor 43

Let rest for 10 - 15 minutes, stirring a few times to fully blend the flavors.

Enjoy!

  5. I´ve been looking for licor 43 for ages now. I run out of my last bottle and now I can´t find it. It´s so good, I can´t imagine with berries! The best vanilla ice cream of my life is made with this licor, I´ll email you the recipe, it´s from Maida Heatter. It´s so worth it! And on top of those waffles and berries...

  6. Susan, the only Belgium waffle maker I have is a Mickey Mouse one but that will only lend to the charm of this wonderful breakfast or brunch dish. I even think I would do this just for myself on a Sunday while watching "CBS Sunday Morning", my fave television show. Sorta celebrating the week ahead-type-of-thing. I, of course, had never heard of Licor 43 (put that in the Sirancha category) but it's on my list next time I visit my beverage guy. If Paula can't find some before I go to South America, I will throw some in my luggage for her.

  8. Susan, I thought I wrote on this page already…if I have just delete this one! Your waffles look so lovely…such a nice breakfast! The fresh berries look beautiful on top…I’m sure incredible tasting after being macerated in the licor 43!
