Carrot Coconut Scones with Citrus Glaze ~ Baked Sunday Mornings Make-up


This week's Baked Sunday Mornings challenge is for Whole Wheat Cinnamon Sugar Pretzels  but I decided to make up a recipe I missed since the group baked it before I joined: Carrot Coconut Scones with Citrus Glaze.  I love scones.  The Baked Boys specialize in recreating classics by giving them a modern twist.  The flavor and texture of these scones can't be beat and the citrus glaze is the perfect finish.


I used to work for an English company that designed management information systems for English and American community colleges.  I was in charge of training in the U.S. and my job kept me on the road constantly.  My typical morning in the States consisted of stopping into Starbucks on the way to work to pick up hot tea and a Maple Oat Pecan Scone.  Long after I left that job and resumed my life at home, I remembered those scones...and I love coconut, so I created these Coconut Walnut Scones.  Adding carrots and orange never occurred to me that's why we love these guys!  


These scones can be made any time of the year.  Making a puree of carrot and orange juice provided a smooth, moist flavor base for the scones and the coconut and oats added layers of texture.

  3. I would love to stop in and pick up one of these scones;-) I missed the assigned Baked recipe this week, just a busy week!
    Oh well, it's nice to see a make up baking project here, I would like to try this scone recipe;-)

  5. I'm so glad you got to make these - I was so surprised at how much I liked them!

    Thanks for the tip on the baking soda. I was wondering the same thing - I normally use Arm & Hammer but had a bag of Bob's Red Mill. I just picked up more Arm & Hammer today, and I'm purging all other baking sodas from my house!
