This week's French Fridays with Dorie challenge is for Spiced-Poached Apples (or Pears). I have to admit that I was less than enthusiastic about trying this recipe since John makes the most amazing Riesling Poached Pears quite often. I couldn't understand why a French recipe would call for fruit to be poached in water rather than wine, so we used 2008 Beringer Knight's Valley Alluvium Blanc in place of the water. We also used apples instead of our typical pears. I can't say that we loved this recipe. It was easy enough to prepare on a weeknight, but I don't think we'll make it again.

ReplyDeleteSorry these didn't wow you....I love the idea of poaching pears in wine....mmmmmm. I had trouble figuring what variety of apples to use, so I switched to pears. Aw...love Mr. Braveheart!
ReplyDeleteWine is the perfect choice, I agree with you! But then, I love cooking and baking with wine so much it´s ridiculous. I really liked this recipe, since I think it can be used in many other desserts, but found it worked much better with the pears than the apples. By the way, I like the spoons!
ReplyDeleteWhat this week's FFWD recipe made me know is that I like "cooked fruit" better than I thought. It's been a long time since I made it myself. I did like this week's compote and will thrown in some wine, brandy, alcohol next time around. I will search for John's recipe also since that sounds delicious as well.
ReplyDeleteEnh, if you already have a favorite recipe for something, it's always hard for other recipes to live up to that one. No harm done. At least it's a cheap and quick recipe, so you didn't lose too much $ or time on it. On to the next!
ReplyDeleteI think I just poached mine straight in the syrup (that I had added brandy to). I love wine poached fruit, so I can see where this one wouldn't stand up.

ReplyDeleteIt's hard when you're comparing a new recipe to a favourite one, especially when the recipe leaves out an element that really works for you. Your presentation is beautiful (I went a homier route this week).
Your pears look wonderful. Sorry they were not one of your favorites. Great idea poaching the fruit in wine - must give it a try. I hope you have a nice weekend:)
ReplyDeleteI found that I really enjoyed the simplicity of this one. I too have poached pears for ever in white wine, red wine, port, cognac, whatever but never made them without booze. They weren't bad and I found, for the first time, that I was craving them for breakfast with yogurt. Never did that with brandy pears or pears armagnac. Just from my reading through the posts it seems like people who did pears enjoyed this one more. Hmm... I hope you saved the poaching liquid for making martinis? Nothing here went to waste for me!

The apartment (top floor of a house) that we're going to rent is in Bacoli, right down the road from Arco Felice! It's so beautiful down there, with all the water views. ReplyDeleteSusan, I will be trying your poached pears in Riesling…they sound wonderful! I enjoyed this recipe, but thought it a bit sweet…I actually added about a cup of white wine. Sorry this wasn’t a hit for you…but when you make a version that is over the top it’s hard to accept a lesser version. Have a great weekend!

even though I used our backyard apples, I have to say that I think I like the texture of pears better, as a poached fruit. it's always good to try something new though.
