Every fall, my sister-in-law, Pam, heads to the hills of Tehachapi, Calilfornia, to buy apples. This year, she shared some with me along with this irresistible recipe. The cake is so moist and flavorful and the cinnamon sugar creates a crisp shell. Then, the cake is brushed with caramel – as if you needed any further temptation!
Fresh Apple Cake
Preheat oven to 350 degrees.
Butter a 10-cup Bundt Pan and coat the inside with 1/4 cup Cinnamon Sugar – shake to coat completely.
Set aside.
Cut 4 Apples into small, diced pieces – set aside.
In a large mixing bowl, stir together:
3 Eggs
1 cup Vegetable Oil
2 cups Sugar
The fold in:
2 cups Flour
1/2 teaspoon Baking Soda
1 teaspoon Cinnamon
1/2 teaspoon Salt
When thoroughly combined, pour into prepared Bundt Pan.
Bake for 1 hour
Let rest in pan for 10 minutes before turning out onto cake plate
While the cake is cooling, prepare the Caramel Glaze.
Caramel Glaze
In a small saucepan, over medium heat, whisk:
2 Tablespoons Butter
2 Tablespoons Milk
1/2 cup Dark Brown Sugar
Bring to a boil and cook for 1 minute.
Remove from heat and brush all over the cake.
Enjoy!

Oh my that looks fabulous! I love apple cake with caramel. I bet it would also be great if you poured some of the hot caramel over the hot cake while still in the pan. It would soak in and make it all gooey and yummy!
