Red Velvet Cake with Coconut-Pecan Frosting ~ Southern Cakes

I made this wonderful Red Velvet Cake for my sister-in-law, Stephanie's birthday.  The recipe comes from Southern Cakes by Nancie McDermott - another Charleston find.  You can find the recipe here.  Red Velvet Cake is a Southern classic immortalized by the Armadillo Groom's Cake scene in Steel Magnolias.

What sets this cake apart is the Coconut-Pecan frosting - it's amazing.  And, I am thrilled that I finally mastered fluffy cooked buttercream!  This has been an ongoing challenge for me with a few of the Baked Sunday Mornings recipes.  The only change I made was to top the cake with shaved white chocolate.

I made this centerpiece by hollowing out a pumpkin and placing a jar inside of it to hold the flowers and water.

  6. I bet when John brought you home, his entire family stood up and cheered. Your in-laws are lucky indeed and I hope Stephanie was duly appreciative. Your cake looks fabulous - as a Southerner by osmosis after 4 years at Florida State, I am familiar with Red Velvet cake. I never could get over the color. As a nineteen-year-old, that was amazing to me. Happy Thanksgiving to you both and Braveheart and I look forward to seeing what you come up with over the holidays.
