Lemon Pistachio Cornmeal Muffins ~ Baked Sunday Mornings

This week's Baked Sunday Mornings challenge is for Lemon Pistachio Cornmeal Muffins.  I had no idea what to expect.  They were described as sweet, lemony, and salty...hmm...

They were really interesting - in a good way.  They were sweet and lemony, but not too salty.  These muffins come together quickly and easily.  But, the best thing about them is you can eat them any time of the day.  We served them as bread with dinner, but will definitely have them for breakfast tomorrow morning as well.  The colors are great and I think these would look lovely on an Easter buffet in a mini-muffin size.   We tend to favor walnuts and pecans for baking, so it was fun to bake with pistachios for a change.

  2. Susan, I love the way that combination of flavors sounds. Lemon and pistachio sounds so yummy together, I would have never thought of that. I can see how they would be great any time of the day.

  6. You would only have had to produce your last picture to sell me on this cornbread. Love the flecks of green. Everything in it is a flavor I like. I also love your -ready-to-bake use of parchment paper (right?) . Lovely.
