Malted Milk Sandwich Cookies ~ Baked Sunday Mornings


Don't you just want one?  Or 2...or 3?
Rich malt and brown sugar cookie dough




This week's Baked Sunday Mornings challenge is for these remarkable Malted Milk Sandwich Cookies.  They are relatively simple to make and totally addictive.  I was trying to think what they reminded me of - our niece, Chelsea, said her boyfriend, Frank, said they taste like vanilla ice cream!

Although these come together quickly, you do have to plan ahead to make them.  I made the dough one night and half of the cookies the next day. As soon as we had eaten and given those away, I made the rest of them.  One really nice thing about refrigerator cookies - they keep until you're ready to bake them.

I like soft cookies, so I went with the shorter baking time.  We will definitely add these to our list of holiday cookies.  They're just delicious - chewy malt cookies with rum and vanilla filling = YUM!

  6. I almost didn't make these since they were roll-and-cut cookies, which make me groan, but I'm glad I did because they were a lot easier than I'd expected and look impressive. Yours look lovely! :)

  16. I loved these too-- they are among my all-time favorite cookies! :) I loved your flower cutter, Susan-- I used a fluted biscuit cutter, and the ridges had mostly disappeared once they were baked. The more pronounced scallops on your cutter worked better. Nicely done!
